Potato Salad

Boil potatoes in cold, salted water for 20 minutes or until easily pierced with a fork. Drain the potatoes then toss with vinegar. Let the vinegar absorb for 10 minutes. Mix in remaining ingredients including salt and pepper to taste. Refrigerate at least 30 minutes.

Serve chilled.

2 pounds potatoes, diced 2 tablespoons vinegar ½ cup celery, diced ¼ cup sweet onion, diced 1 green onion, diced ¼ cup cilantro, diced 1 garlic clove, minced 2 tablespoons honey 2 teaspoons mustard ½ cup mayonnaise salt black pepper Makes eight servings of potato salad.
